Sam's Favorite Dessert

I made Sam his favorite dessert for his First Communion. When Colin was alive, he also loved this and asked for it quite often. I thought of him all Sunday morning...how sad it is that he never got to have a First Communion. In my heart, I hoped his spirit was somehow there with us, celebrating. He would've loved the part where you drink the wine, ha ha! Just think, he gets to dine with Jesus every day, if there is such a thing in Heaven. He doesn't need bread and wine!

Unfortunately I was so busy that day that I forgot to take pictures! I did get some shots of the torte as I was making it though. It is delicious and makes a great spring dessert for any get together. I got this recipe from my step-mother's aunt who makes great desserts:

Pistachio Torte

Ingredients:

50 ritz crackers, crushed

1/2 c. margarine or butter, melted

Mix these two together and press into the bottom of a 9x13 baking dish and bake at 375 for 10 minutes:

Let the crust cool completely. You will then need:

2 (3 oz.) pkgs. instant pistachio pudding

4 c. vanilla ice cream

1 tub cool whip

2 heath bars

2 c. milk

Beat the pudding and milk until smooth in mixer. Add in ice cream, a bit at a time, and beat until smooth:

At this point you will want to lick the beaters becuase it is way too good not to.

Next, spread mixture on cooled crust:

Spread the cool whip over this. Break up the Heath bars with a rolling pin, thinking of all the things that made you mad that day. It'll make you feel so much better:

Sprinkle heath bars on cool whip and refrigerate to set overnight, or at least 4 hours.
