Weeknight Easy: BBQ Chicken Quesadillas



"Make yourself a dang quesadilla!" Ok, I don't know about you, but every time I hear the word "quesadilla" I think of Napoleon Dynamite. If you haven't seen this quirky comedy from a few years ago, you wouldn't get that at all! Sam used to love that movie. He even dressed as Napoleon one year for Halloween. It was hilarious! He played the part perfectly:



Now, for the recipe. This one sounds odd. After all, what is bbq sauce doing in a mexican recipe? As weird as it sounds, it tastes surprisingly satisfying. It's easy as can be and is great for leftovers. Remember how I mentioned how I roast 2 chickens on Sunday nights, one for eating and one for another meal? This is one of the recipes I make with the extra chicken. Great for a main entree or an appetizer:


BBQ Chicken Quesadillas
1 whole chicken, shredded
Your favorite bbq sauce, about 1 c. or so
4-8" flour tortillas
taco sauce (you choose how hot you want it!)
favorite salsa
extra sharp cheddar cheese, shredded
1 can green chiles

Remove chicken from the bone and shred fine. I do it in the food processor. Add your bbq sauce, as little or as much as you like:



Lay one tortilla on a lightly sprayed cookie sheet. Spread the tortilla with taco sauce:


Now spread generously with the bbq chicken:


Then the green chiles, some salsa,then some shredded cheese:


Repeat with all four tortillas, making 4 layers. Bake in a 425 degree oven for 15 minutes, or until cheese is melted throughout and it's slightly golden brown. Remove from oven and cut into quarters. Garnish with sour cream, salsa, and cilantro. I often throw in fresh chives from the garden as well.



Like I said, super easy for a busy weeknight! Serve with a side of spanish rice.

"Tina you fat lard, come get your food!" (Again, watch Napoleon if you don't get that!)

These look divine. Really, they do. Last night I made your Hot Fudge Ice Cream sandwich dessert. OMG, is that good. Spencer and I pigged out after dinner. He loved it!

Thought I would mention how nice it is that you labeled your posts. That recipe was really easy to find last night.

Ha ha, I love Napoleon. We say the "tina" bit whenever we go buy a field of alpacas near here.

I love Napoleon! The first time I saw that movie I wondered what the big deal was. Then I watched it a few more times and was addicted!

I made your recipe on the 4th for my parents who were here visiting. My dad loved these! We all did. They were so easy to make and we didn't have an ounce leftover!
