True Love Truffles (To Go In the Favor Boxes)

I've gotta say, I have no idea what I'm doing on here right now, because my feet are killing me! I've been on my feet all day long, making food for the shower. Still, I wanted to share some of the recipes here. I'll be posting more in the next few days also. Here is the truffle recipe I made for the favor boxes:

True Love Truffles
1/2 cup butter, softened
3/4 cup packed brown sugar
2-1/2 cups all-purpose flour
1 can (14 ounces) sweetened condensed milk
1 teaspoon vanilla extract
1/2 cup miniature semisweet chocolate chips
Chocolate almond bark or 2 c. semi-sweet chocolate chips mixed with 2 T. shortening
icing for decorating

In a large bowl, cream the butter and brown sugar until light and fluffy. Add vanilla. Add milk, and then flour:

Add in the chocolate chips and mix well. Form into 1" balls (I use a small melon baller scoop for uniform size):

Refrigerate for a couple of hours. Melt the almond bark/or semi-sweet chips (use this if you like a shinier look to your chocolate, but it won't set as hard or as nicely) with the shortening in a microwave safe bowl for 1 minute or so. Once chocolate is smooth, remove balls from fridge and roll each in chocolate, covering completely:

Lay on wax paper to set. Once the chocolate hardens, you can decorate the truffles and put them in miniature muffin papers. You could also roll them in nuts or sprinkles when the chocolate is still wet. They look so cute in the pink and brown favor boxes. So much fun!

I'll be back tomorrow night with more pictures and recipes. Happy Weekend everyone :)

You are a god among men. I bow down before you, Tanya! ::I am not worthy, I am not worthy::!

You put all of us to shame who think Jordan Almonds in a little bag of tulle is sufficient! :)

Millie-white chocolate would taste great. I have a truffle recipe that uses quite a bit of white chocolate also. I'll have to post that sometime.

Thanks Susan!
